What do you do when you have a love of kebabs and are already running another restaurant in the CBD block? Open a kebab shop of course.
Harjinder and Anisha Singh opened their new kebab shop, Kebab King, on Keen Street last Monday and already they are doing a roaring trade.
When the Lismore App went in for a chat on Saturday afternoon, both were hard at work taking orders and making Lismore's newest kebabs to a constant stream of customers.
Why the name?
"Oh, just because it is Lismore and we want to make Lismore's best kebabs, that's why we thought Kebab King", Anisha laughed.
Anisha explained why they decided to open the business, "My husband loves to eat kebabs and he loves to make a kebab so he thought why not open a kebab shop. We were looking for a very long time but after the floods it was hard to find builders and trades people otherwise we would have opened this earlier."
Harjinder or Harry if you prefer, said he and his brother went to Mary G's for a beer one Saturday night and at 10 o'clock they were hungry but there was nothing open in the CBD.
"Everything was closed at ten o'clock, everything was shutdown at nighttime. That was when it clicked in my mind that this can be good for community and for us so let's open it up."
Harjinder and Anisha are not strangers to the food industry. They are now running Cafe Saffron in Magellan Street after Harjinder's brother decided he did not want to reopen after the February 28 megaflood last year.
Harjinder was working with him in the Indian restaurant that he had owned since 2012 so rather than see it close the couple decided to take it on. Harjinder's brother is helping them with the restaurant still which allows them to work on the Kebab King business.
Like most business owners after February 28 and the March flood too a month later, the people of Lismore came to Cafe Saffron's aid.
"The people here were seriously amazing, Harjinder explained, "They were helping a lot, going door to door asking if they can help. They don't know us but they wanted to help. It was a hard time for everybody. You won't see this anywhere else."
Kebab King is open Monday to Wednesday from 9:30am to 6pm with Thursday, Friday and Saturday nights open until late which will be on a trial basis.
"We want to see how it goes and how the people are. I don't want to put any of my staff at risk so if it's going good we will stay open until midnight, something like that."

"It's not a hard job, it's really easy," Anisha said, "If you stay here for two to three hours and concentrate how to do things, the job is easy."
