Roll up, roll up - the yellow carpet has been rolled out at the new pop up Coles shop in Lismore today.

Situated behind the art gallery in the Quad car park, the new shop resembles a large white circus tent.

Inside, there’s air conditioning and palettes of food.

Lismore Coles store manager Cheryl said she was excited to open the pop-up today – and to have all the previous Lismore team members working in the new shop.

As well as dairy, meat, bread and fresh produce, Cheryl said the pop-up shop sells the top 50 lines of produce that had previously been sold in the Lismore shop.

Perhaps (not) surprisingly, there’s a palette of Minties sitting next to flatbread wraps. There’s also a palette of eskies and a freezer full of bags of ice.

Cheryl said she will look at expanding what stock the shop has.

“We can include items that people come in looking for – just let us know,” she said.

“We know that not everyone has transport after the flood, so this shop is designed for people to come in and get dinner essentials in small shops.

It’s going to be open 8am to 6pm seven days a week (except Good Friday) and payment is by EFTPOS only.

Cheryl said Coles will definitely open up again in Lismore Shopping Square n the coming months.

“We are just getting it organised and we have no definite timeline for reopening yet.”
