Pepe Fassos is the Owner and Grower of 560 Farms. A farm he owns and grows with his wife Jacqui and their children. Their farm was fully inundated and drastically impacted through the February floods, where Pepe says "we like so many, lost absolutely everything."
Certified Organic is your guarantee of the highest quality micro greens and edible flowers possible. Local businesses who love what this family create, chose to lift them up, to get them back producing, and now they can celebrate a 5-year-long mission, to become 100% Certified Organic!
560 farms is a very colourful, beautiful farm to experience, Pepe grows a huge range of edible flowers, but it's not all about looks! Under the expert care of the family-owned and operated venture, their range is bringing optimal nutrition in a hugely diverse range of a biohacker superfood, Micro Greens.
Health website healthily.com says "Microgreens Are Nutritious. Microgreens are packed with nutrients. While their nutrient contents vary slightly, most varieties tend to be rich in potassium, iron, zinc, magnesium and copper. Microgreens are also a great source of beneficial plant compounds like antioxidants.

Microgreens are young vegetable greens that are approximately 1–3 inches (2.5–7.5 cm) tall.
They have an aromatic flavour and concentrated nutrient content and come in a variety of colours and textures (1).
Microgreens are considered baby plants, falling somewhere between a sprout and baby green.
That said, they shouldn’t be confused with sprouts, which do not have leaves. Sprouts also have a much shorter growing cycle of 2–7 days, whereas microgreens are usually harvested 7–21 days after germination, once the plant’s first true leaves have emerged.
Microgreens are more similar to baby greens in that only their stems and leaves are considered edible. However, unlike baby greens, they are much smaller in size and can be sold before being harvested. This means that the plants can be bought whole and cut at home, keeping them alive until they are consumed.
Pepe, says that while the water came through and took everything, reaching two thirds of the way up his second-story home windows on the farm, the community has been an incredible support for the family, and has allowed them to get back on their feet, with two incredibly well-stocked grow tunnels.
560 Farms specialises in edible flowers and micro greens stating on their website "we are specialists and don't get distracted by other offerings. We focus on the soil health, plant health and nutrition and "good bugs" to deliver the best natural products possible.
Pepe also informed the Lismore App that although he lost his beautiful biodynamic compost, and topsoil, after soil tests of his farm and property, there are no contaminants, and the soil quality and pH is all great, which is easily seen by the thriving market garden.
560 Farms stocks local restaurants and is starting to again, stock local food shops as well, starting with the SPAR in East Lismore, at the Wyrallah Rd Shopping Complex. You can also find these delicious and super-nutritious foods at the Byron, Bangalow and Ballina Farmers Markets.
