Coconut Chili Chicken

Ingredients:
Diced chicken pieces
Can coconut cream
Tablespoon peanut butter
Chopped fresh basil
Chopped red onion
Sliced fresh mushrooms
Broccoli florets
Diced baked sweet potato
Fresh chili - to taste
1 teaspoon ginger powder
Garlic - to taste
Salt and pepper - to taste
Avocado oil or Extra Virgin Olive oil
Method
Pan fry garlic in oil
Add onion
Add chicken and fry till brownish
Add mushrooms and fry off
Add chopped chili
Add ginger
Stir in peanut butter
Stir in coconut cream
Add basil
Add broccoli
Add sweet potato
Salt and pepper to taste
Can be served with rice
